Vineyard characteristics

From the vineyard located in Monte Pino we produce this pure Aglianico del Taburno. The hilly position, the good endowment of nutritive elements and the fresh exposure allow to reach original and high quality results.

Thinning and Maturation

Monte Pino vineyard is subject to an intense thinning of the bunches during the veraison, which can be generally estimated in the order of 50 - 60%.

Vinification Technique

The grapes, harvested in the third decade of October, undergo soft destemming and crushing, followed by alcoholic fermentation in stainless steel tanks at a controlled temperature, ranging between 25 and 28 C°, capable of extracting the noble compounds of the skin with the help of periodic pumping over. Maceration on skins lasts 35-40 days.

Refinement

The refining process takes place, after the malolactic fermentation, in large French oak casks for a period of 14 - 16 months. After this period, the wine is prepared for the bottle, where it will be aged for other 12 months.

Longevity

Aglianico Monte Pino is a wine having a long aging capacity. Its main characteristic is to express in a changeable and variable way during the aging in bottle complex aromatic bouquets of extraordinary elegance.

Organoleptic characteristics

Ruby red color, which after some years of aging in bottle will tend to get garnet red reflections. Typical spicy aromas, of oriental nature, such as hints of clove and pepper join the aromatic bouquet which is formed with the reductive evolution which takes place in bottle. Structured and persistent, with lively and smooth tannins.
